Ingredients – Bee mixture
1/2 cup crushed Rice Bubbles
1/2 cup desiccated coconut
4 dried apricots chopped finely
2 heaped tablespoons smooth peanut butter
1 tablespoon honey
To decorate
1 heaped tablespoon dark chocolate chips melted
flaked almonds (for bee wings)
Method
- In a mixing bowl, combine all bee mixture ingredients well. Test mixture by gently squeezing a spoonful of mixture in the palm of your hand. Mixture should hold shape and not crumble. If it is too sticky, try adding some more Rice Bubbles. If it is too crumbly, try adding a tiny bit more honey until mixture holds a ball shape.
- Shape spoonful of mixture into small ball-shaped bees.
- Place balls in the fridge to set for about 10 minutes.
- To decorate the honey bees, dip the handle end of a teaspoon into the melted chocolate and gently paint stripes across the back of each bee using the edge on the spoon handle.
- Stick two flaked almonds onto the top of each ball using the melted chocolate to glue them in place.
- Pop in the fridge until chocolate is set firm.
